A Hop-Chops (formerly having Hop-Chop as a singular form[1]) is an uncommon type of enemy encountered in a few of the Super Mario series titles. They are sentient green springboards with a square head, red eyes, and sharp teeth. Hop-Chops usually appear in groups of three or more, and are located in areas that require a springboard to obtain a collectible, such as a Green Star. Hop-Chops first appear in Super Mario 3D World.
History
Super Mario 3D World / Super Mario 3D World + Bowser's Fury
In Super Mario 3D World and its Nintendo Switch remake Super Mario 3D World + Bowser's Fury, Hop-Chops are usually found in groups. Whenever a Hop-Chop is encountered, it starts bouncing toward them. Hop-Chops can be defeated by any attack. Some Hop-Chops react slower than others, and these turn into a usable springboard upon being defeated. Usually, only one Hop-Chop within a group can turn into a springboard. If left as a springboard for too long, including while it is carried, the Hop-Chop reverts back into its usual form.
Hop-Chops appear in three levels: Big Bounce Byway, Searchlight Sneak, and Mystery House Marathon.
Super Mario Maker 2
In Super Mario Maker 2, Hop-Chops are one of the enemies that can be placed in stages, though only if they use the Super Mario 3D World style. A Hop-Chops can no longer be defeated by jumping on it, and instead functiona as a Trampoline initially. If a Hop-Chops is given wings, it jumps and then hovers above the ground before dropping back down.

"Take the Hop-Chop that turned into the springboard with you as you cross the chasm using the giant Mushroom Trampolines. You’ve got to work fast, as the Hop-Chop will eventually recover and then you’ll drop it into the chasm. Cross the Checkpoint Flag, then go north from there and take the Hop-Chop with you up the steps; drop it at the center of the grass."
